You're My Little Christmas Pud!

Recipe adapted from Lean Bean Nutrition, thank you!
20g White Chocolate or for a Vegan alternative use our Vanoffe Raw Chocolate Bar
1 tbsp Date Caramel (Recipe on the Lean Bean Nutrition website here)
Raw Goji Berries (1 per pudding)
100g Cashew Nuts
1 cup Bulgarwheat / quinoa (blended to form a flour)
25g Maple Syrup 
5 Dates
1/4 cup Water
3 tbsp Raw Chia Seeds
2 tbsp Coconut Oil 
Preheat your oven to 180c
Soak your dates in 1/4 cup of warm water
Blend your bulgarwheat, cashews and almonds/sweet apricot kernels to form a flour.
add the maple syrup, melted coconut oil and chia seeds
Blend the dates in the water (fastTrack date caramel) and add to the rest of the mix.
Place the mix on a lined baking tray (crumbled) and bake until golden. 
Remove and allow to cool
Add the crumble to a bowl of melted chocolate and raw cacao and press into moulds (I used half of my cake pop moulds)
Add a drop of caramel to the top of each chocolate, then cover with white chocolate.
Decorate with a goji berry and some holly!
