Vegan Chocolate Granola

Vegan | Can be Gluten Free

This Granola is the perfect way to start your day. Packed with good fats and protein, it's your one-stop-shop kind of breakfast!

For those of you feeling experimental, try adding raspberries, banana or vanilla to your mix for a bit of extra flavour.

This recipe is fab because it's completely vegan too! 

The mixture will keep for about a week in an air tight container.

400g oats
200g coconut oil
4 tbsp cacao powder 
2 x 44g Vanoffee Dark 
4 tbsp maple syrup
2 tbsp chopped walnuts 

Preheat the oven to 180 degrees and line a large baking sheet with grease-proof paper.

Melt your coconut oil in a pan.

Whilst this is happening chop your chocolate into small-ish chunks and add to a large bowl with all the other ingredients.

Once the coconut oil has melted add this to the large bowl and mix well.

Lay out the oat mixture onto your baking sheet making sure to spread evenly. Bake for 15 minutes until the oats start to crisp but before they catch and burn.

Remove from the oven and leave to cool. Enjoy with dairy free yoghurt or milk!!
