Vegan Chocolate Chip Cookies

vegan | refined sugar free

These are super simple to make, refined sugar free and almost a family staple now!

 

Ingredients:

 

75g coconut oil or vegan marg

60g coconut sugar

1 large mashed banana

175g spelt flour

1 tsp baking powder

½ tsp almond essence

1-2 tbsp milk of choice

150g raw chocolate mulberry chips

50g raw chocolate almonds, crushed

Pinch salt

 

Method:

Preheat the oven to 180oC

Cream together the fat and sugar until smooth

Add the mashed banana, then the flour and baking powder.

Add a little milk and almond essence, the nuts, salt and raw chocolate mulberry chips.

From into balls and squish onto a greased baking tray

Bake for 15-20 mins, until slightly browned, but still a bit squishy.

Cool.

Enjoy with friends and a cup of tea.
