vegan | refined sugar free

INGREDIENTS:

280g wholewheat flour
140g coconut sugar
60g cacao powder 
½ tsp baking powder
½ tsp bicarbonate of soda
1½ tsp almond extract 
150ml coconut oil
300g apple puree
250 soya milk (or any dairy-free milk) 

INGREDIENTS FOR THE CHOCOLATE SAUCE:

80g pitted dates (soaked in hot water)
4 tbsp cacao powder

TO DECORATE:

Fresh Raspberries
Raw Chocolate Almonds 

METHOD:

Preheat the oven to 180°C/350F/Gas mark 4.
Begin by sieving the flour, baking powder, bicarbonate of soda, and the coconut sugar into a large mixing bowl.
Pour the coconut oil, almond extract, and apple puree over the dry ingredients and slowly begin to combine the wet and dry ingredients together.
Pour the soya milk and stir to combine the ingredients together and form the brownie batter.
Pour the batter into a greased baking tray and place in the oven to bake for approximately 35 minutes.
When the brownies have finished baking, let them cool for approximately 15 minutes, then go around the edges with a knife to allow easy removal from the baking tray.
Remove from the tray and let it cool on a wire rack while you prepare the chocolate sauce.
Remove the water from the soaked dates and place the dates along with cacao powder into a powerful blender and pulse until you achieve a thick and creamy chocolate sauce.
Cut the brownies into equal squares, drizzle over the chocolate sauce and decorate with fresh raspberries and chocolate coated almonds.
