Rawtella from Tanya Maher

Not only has Tanya given us two signed copies of The Uncook Book to give away, she has also shared with us her astounding recipe for Rawtella...over to Tanya:

When asked what I miss most about cooked food, my answer was always ‘Nutella’ – until I created a raw version. The combination of hazelnuts and chocolate is a winner and kids go nuts for this one!

 

Ingredients:

150g (5½oz) hazelnuts, soaked for 6–8 hours

65g (2¼oz) cashew nuts, soaked for 6–8 hours

105g (3½oz) coconut oil, melted

110g (4oz) agave nectar or 100g (3oz) maple syrup

2 tbsp cacao powder

2 tbsp hot water

1 tbsp extra virgin olive oil

1 tsp vanilla extract

½ tsp Himalayan salt

Break down the nuts in a powerful food processor. Add the remaining ingredients and process for a further 5–10 minutes until the mixture has your desired consistency. For a smooth mix, continue to blend in a powerful blender. Transfer to a jar and keep refrigerated for up to 2 weeks.
