Peanut butter Vanoffee centred Chocolates

Vegan | Gluten-free

Our good friend Niki offered to make some chocolates for us and came up with this amazing recipe. Raw chocolates with a sublime, salty peanut butter Vanoffee filling. They're just awesome :)

You'll need:

For the raw chocolate moulds:
100g cacao butter 
5tbsp cacao powder 
3tbsp coconut sugar  
½tsp course sea salt 

For the salted peanut butter-vanoffee filling:
40g Vanoffee  
1tsp coconut oil
2tbsp smooth peanut butter
1tbsp water

Step 1:
Start by making your salted peanut butter vanoffee filling. Add your vanoffee chocolate, coconut oil, peanut butter and water in a small pan and blend together until smooth. Scrape your filling into a dish and pop to one side to cool completely. 
Step 2:
Add your cacao butter to your saucepan and melt very gently over a low heat. If it gets too hot, remove from the heat occasionally. Once melted, add in your cacao powder, coconut sugar and whisk until smooth.
Step 3:
Use a teaspoon to evenly pour a little chocolate into the moulds and place the moulds into the fridge for a couple of minutes to firm up. While they are chilling, keep your chocolate warm, near the stove.
Step 4:
After the time has passed, spoon your salted peanut butter vanoffee filling into the little moulds, try not to make it touch the sides but rather be centred in the middle. At this point sprinkle some sea salt into the moulds.  Use your teaspoon to spoon the rest of the chocolate evenly on top of each mould and then refrigerate the chocolate for a few hours until firm.
