Orange and Cranberry Scones with Chocolate

Vegan | Gluten Free

These little beauties are light and fluffy and filled with the flavours of Christmas!
Try experimenting with your flavours. If cranberries are a no go for you, why not try using raspberries or strawberries instead?

350g buckwheat flour
¼ tsp salt
1 ½ tsp baking powder
85g coconut oil
4 tbsp coconut sugar 
1 tbsp caster sugar (for snow decoration)
175ml almond milk
Juice ½ orange
Zest 2 oranges
100g dried cranberries 
100g Raw Chocolate Mulberries

Preheat the oven to 180oC and line a baking tray with greaseproof paper
In a large mixing bowl blend together your flour, baking powder and coconut oil into a crumb. I use my finger tips for this but a fork works just as well. Now mix in your salt, orange zest, sugar, cranberries and chocolate mulberries until evenly distributed.
Add your milk and orange juice to bring the mixture together into a ball.
Roll out to about 5cm thick and cut your shapes. I used a round cookie cutter but why not try something like a star shape for Christmas?
Place onto a baking tray and dust with caster sugar. Bake for 12-15 minutes until starting to go golden.

Hi! These look great! Is there anything I can replace the coconut oil with? (I'm allergic to coconut products...)

Hi Nicky,

 We suggest replacing the coconut oil with a vegan margarine, that should work just as well as coconut oil
