Mulberry Chocolate Breakfast Cookies

Vegan | Gluten Free | Refined Sugar Free

These breakfast cookies are great to make in advance for a breakfast or snack on the go.  Full of complex carbs for sustained energy, and made special with a drizzle of silky sweet vanoffee on top!



125 Mashed Banana

100g Oats

50g Mulberries

25g Mulberry Chips

1Tablespoon Cacao powder

1tsp cinnamon

1/2t baking powder

6 squares Vanoffee chocolate



Mash banana and add it to bowl

Add remaining ingredients, (except Vanoffe) to bowl and mix well to combine.

Shape into 6 cookies.

Place cookies on a baking tray lined with parchment paper.

Bake for 15mins at 180 degrees C.

Let cookies cool.

Melt Vanoffee in a bain-marie and drizzle over the cookies.

Keep cookies in an airtight container (if you don't eat them all in one go!)
