Ginger Oaty Cookies

Vegan | Gluten Free

Here’s a yummy ginger chocolate cookie recipe just in time for National Cookie Day! Alara Scottish oats are gluten free and uniquely kiln dried. Kiln drying brings out a nutty flavour and does not destroy enzymes or vitamins, but does make the oats more digestible. 


100g Coconut Sugar
150g Oat Flour (simply blend Alara Scottish Oats)
2 tsp Bicarbonate of Soda
1 tsp Sea Salt
4 tsp Ground Ginger
2 tsp Cinnamon
350g Alara Scottish Oats
225g Coconut Oil (melted)
100g Pure Maple Syrup
Vegan "Eggs" - 2tbsp Water, 2 tsp Vegetable Oil, 2 tsp Baking Powder
50g Stem Ginger
2 bars Pitch Dark
Decorate with Raw Chocolate Ginger


Preheat oven to 180C and line two baking trays with baking paper
Combine coconut sugar, oat flour, bicarb, salt and spices and mix well
Stir in the oats and pour in the melted coconut oil and maple - stir until well combined
Stir in the vegan "egg" mixture and the stem ginger
Spoon even, heaped teaspoons onto the lined baking trays and bake for 10-15 minutes
Once cookies are cool, melt the Pitch Dark chocolate, dip half of each cookie into the melted chocolate and pop a piece of raw chocolate ginger on top of each cookie
Place cookies on a cooling rack until the chocolate has set.
