Giant Spider Cookies

Giant Spider Cookies  Linus Gorpe Vegan Chocolate

Vegan | Gluten Free | Refined Sugar Free

Let’s get into the Halloween spirit with these giant spiderweb minty-chocolatey cookies! Gluten free, vegan and dairy free, these are for everyone to enjoy!
You'll need: 
150g ground almonds
80g  gluten free plain flour 
4 tablespoons agave syrup
1 chia egg portion (just 1 Tbsp chia seeds + 2.5 Tbsp water = a chia egg. )
1 teaspoon vanilla extract
3 tablespoons Cacao powder
1 teaspoon baking powder
100ml coconut oil, melted
2 bars of Mint Explorer, broken into pieces (or you can use our Sugar Free Mint Bar
For decoration:
Up to 2 teaspoons of white icing
Up to 2 teaspoons of dark chocolate icing  
1. Preheat your oven to gas mark 4/180 degrees and line your cookie sheet with greaseproof paper, set aside. 
2. In a large mixing bowl, whisk your melted coconut oil with your agave syrup, vanilla extract and chia egg. 
3. Next, sift in your ground almonds and plain flour, cocoa powder along with your baking powder. 
4. Using your hands, mix together to form a dough (add more flavour to firm up your cookie dough if needed) flatten out in the palm of your hand, place onto your baking tray.. Carry on with the rest of your cookies and bake for 12-15 minutes.
5. Finally, pipe icing onto your cooled cookies in the shape of a bold spider web and allow to set before eating. 
These giant cookies are delicious warm and with a glass of chilled almond milk or two!
