Crunchy, naked Bounty mini bites

Created by our fabulous designer Sara, I have been making these for snacks and packed lunches ever since the recipe hit my inbox! Thank you Sara!

Ingredients 
2 cups desiccated coconut
1 cup soft dates
1/2 tsp vanilla (of your choice, pod powder, extract ..)
Pinch of salt - unrefined sea or rock 
1/4 cup cacao nibs
Blend the first 4 ingredients in a high speed blender (I have a normal magimix) until it starts clumping together 
Transfer to a bowl and mix in the cacao nibs 
Squish down the mixture into the bottom of a normal rectangular break/cake tin
Leave somewhere cool for at least 1/2 hour to firm up then tip out and cut in small squares
Store in a glass jar
