Christmas Shortbread with Ginger

Vegan | Gluten Free | Refined Sugar Free

This shortbread is delicious and has all the flavours of Christmas!
Play around with your flavours - try adding orange, cranberries or even lemon.
This dough can be made in advance and frozen for when needed.

125g coconut oil
55g coconut sugar 
180g buckwheat flour
4 tbsp Raw Chocolate Ginger 

Preheat the oven to 180oC and line a baking tray with grease proof paper 
Mix together all your ingredients in a large mixing bowl until it comes together into a ball.
Roll out to the thickness of a £1 coin and cut into whichever shape you fancy!
Bake for 8-12 minutes until they start to go golden.
