Chocolate Energy Balls

These high protein, sugar free energy balls are a great, clean way to get you though the day. And if you coat some of them in Matcha like us, then they can give you a great pick up too. We’ve also rolled ours in sesame seeds, coconut and cacao powder. You can try all sorts of other coatings – Raw Chocolate Mulberry chips, hemp seeds, crushed nuts or even melted chocolate.
 
 
Ingredients:
 
• 1 cup Dates
• 1 cup Oats
• ½ cup Cacao Powder
• 1 tsp Vanilla
• ¼ cup Mulberries
• 3 tbsp Nut Butter
• ½ cup Sunflower Seeds
• For coating: 2 tbsp each of Sesame Seeds, Desiccated Coconut, Cacao Powder and Matcha Powder
 
Method:
 
1. Soak the dates in water for a few hours.
2. Put the dates and 3-4 tbsp of the water in the blender with the vanilla, cacao powder and nut butter. Blend to a sticky paste.
3. Add the oats and sunflower seeds and blend until well combined.
4. Take one tablespoon of the mixture at a time and form into a ball.
5. Roll in the coatings of your choice and refrigerate for at least two hours.
 
Makes at least 12 Balls. You can substitute the sunflower seeds for pumpkin seeds or almonds, or a mixture. Pre-grind the almonds if you are using them
