Chocolate Chia Pudding

Vegan | Gluten-Free | Refined Sugar Free

Chocolate luxuriance, but light and refreshing too. This is a great pudding to start the day or to wow your visitors.

Pudding: 
50ml Chia Seeds
400ml almond milk 
100g frozen berries of choice 
1 tsp agave (or other liquid sweetener)

Chocolate mousse:
1 ripe avocado
4 dates (pref medjool)
3 tbsp Cacao Powder 
3 tbsp Coconut Sugar 
2 tbsp soy milk

Toppings:
Banana
Berries
Raw Chocolate Mulberry Chips 

Instructions:
Pudding:
Add to a food processor and blitz until almost no chunks remain
Chill in pots for at least 2 hours.

Chocolate mousse: 
Place all ingredients in a blender and blitz until smooth
Add to chia pudding and chill in the fridge (best overnight)

To serve: 
Add toppings, enjoy!
