Baobab Peanut Butter Energy Bites

This is the time of the year in which we need that extra energy, whether it's to get us up-and-running in the morning or during the afternoon when you feel a slump coming on. These baobab bites are not only very tasty but will give you that energy kick you need to last the day.

Ingredients

2 tsp PandaVita organic baobab powder
200g oats
4 x 44g Pitch Dark, roughly chopped (or melted)
1 tbsp hemp seeds
1 tbsp of all natural salted peanut butter
200g dates, pitted (if dry, soak in warm water for 10 minutes)

Method

Pulse the dates in a food processor or blender for 5 minutes.
Add oats, chocolate, baobab powder, sesame and peanut butter and pulse/mix until combined. You want them to be consistently small pieces but not overly processed.
Carefully roll into 1-inch balls (30g per ball), using the warmth of your hands to mould them together. This should yield 15-20 balls.
Store in a covered container in the refrigerator or freezer.
