Acai Coconut Cups

Vegan | Raw | Gluten-Free

A super simple, super nutritious, cheeky chocolate cup recipe from our good friend Caroline.

Makes 9
 
Simple Raw Chocolate Recipe
90g cacao butter
60g cacao powder
60g coconut sugar
 
Gently melt all the ingredients over a steaming bowl of water, mixing all the time. Pour half of the chocolate into muffin moulds and pop in the freezer to set. Set the remaining chocolate aside.
 
Acai coconut butter
80g coconut butter
50g maple syrup
2 tsp acai powder
 
Add all the ingredients to a blender and blend until smooth. Take the moulds with the chocolate out of the freezer and add around 1 tbs of the acai coconutbutter to each mould. Flatten it with a spoon. Reheat the other half of the chocolate and pour it into the moulds. Pop in the freezer for 30 minutes before enjoying!
 
I topped my acai coconut cups with desiccated coconut and cacao nibs.
